Dried Cherry and Walnut Einkorn Oatmeal Cookies


Made with cinnamon, walnuts, sweet cherries, and vanilla, these cookies have been a winner for all who have tried them. Be creative and use dried apricots or other dried fruit instead of cherries or try different kinds of nuts.


Ingredients:


1-1/4 cups butter (2 1/2 sticks), softened


1-1/4 cup unrefined cane sugar


1 egg, room temperature


1 teaspoon vanilla


1-1/2 cups whole grain einkorn flour (158 g)


1 teaspoon baking soda


1 teaspoon baking powder


3/4 teaspoon salt


1 teaspoon ground cinnamon


1/4 teaspoon ground nutmeg (optional)


3 cups old-fashioned rolled oats


1/2 cup dried cherries, roughly chopped


1/2 cup toasted walnuts, roughly chopped



Directions:


1. Preheat oven to 350° F.


2. In a large mixing bowl, using a stand mixer, beat butter with sugar until creamy, about 10 minutes. Stop mixer as needed to scrape down sides of bowl. Add egg and vanilla. Beat well, about 5 minutes.


3. Combine flour, baking soda, salt, cinnamon, and nutmeg.. Using the lowest speed of the mixer or mix by hand, add flour mixture a fourth to a half cup at a time to the butter-sugar mixture. Gently mix until blended. Turn mixer off. Finish the process by hand.


4. Stir in oats, 1 cup at a time. Stir in cherries and walnuts.


5. Spoon onto an ungreased baking sheet. Bake 9-10 minutes or until the edges start to turn golden. Do not overbake.


6. Cool on a baking sheet.


7. Remove to wire racks to finish cooling.


Makes about 5 dozen cookies
